Midnight Fudge Brownies (Vegan & Gluten-Free)

Brownie Decadence Without the Downside

Intro: “Who says you can’t have your cake and eat it too? These midnight fudge brownies are rich, fudgy, and completely plant-based. They are my favorite way to share the ‘blessings’ of the harvest with friends who appreciate the finer, sweeter things in life.” – Karen

The Ingredients for Midnight Fudge Brownies:

• 1 cup Almond flour
• ½ cup Cacao powder
• ½ tsp Baking soda
• ¼ cup Maple syrup
• 1 ‘Flax Egg’ (1 tbsp ground flax mixed with 3 tbsp water)
• 1/3 cup Karen’s Liquid Gold (melted)
• ½ cup Vegan dark chocolate chips

The Method:

1. Prep: Preheat your oven to 175°C (350°F) and line a small square pan with parchment paper.
2. Mix: Combine your dry ingredients in one bowl and your wet ingredients (including the flax egg) in another.
3. Fold: Gently combine them both until you have a thick, chocolatey batter. Fold in those chocolate chips! I like to add nuts as well.
4. Bake: Spread into the pan and bake for 20-22 minutes. They will look a little soft, but they firm up as they cool.
