Karen’s “Cloud Nine” Vegan Cannabis Gummies

The Pectin Secret for Vegan Gummies with Perfect Texture
Intro: “Hello, my cannabis friends! I get asked all the time: ‘Karen, how do I make cannabis gummies without gelatin?’ The secret is Pectin! These are pillowy, shelf-stable, and completely plant-based. They are much better for your tummy and the planet than the old-school versions.” – Karen
The Ingredients:
- 1 cup organic fruit juice (Pomegranate or Mango work beautifully)
- 2 tbsp Pectin powder (available at most health food stores)
- ¼ cup organic cane sugar or Agave
- 1 tsp Citric acid (for that ‘zing’ and preservation)
- 2 tbsp Karen’s Liquid Gold (melted)
- ½ tsp Sunflower Lecithin (the secret to binding the oil to the juice!)
The Method:
- The Emulsion: In a small saucepan, whisk your juice, melted Liquid Gold, and lecithin over low heat. Whisk until you don’t see any oil spots floating on top.
- The Thickener: Slowly whisk in your sugar and pectin. Bring to a gentle simmer for 5 minutes, stirring constantly. Do not let it hard boil!
- The Pour: Remove from heat and stir in the citric acid. Quickly pour the mixture into silicone molds.
- The Set: Let them sit on the counter for 30 minutes, then pop them in the fridge for 2 hours.
