Watermelon & Mint Mocktail

Vegan Cannabis Recipes….Refreshment with a Purpose

Intro: “Sometimes we want the ‘lift’ without the weight of a heavy snack. This watermelon and mint mocktail is my favorite way to cool down after a day of gardening or working. It’s hydrating, bright, and incredibly refreshing.” – Karen

The Ingredients:

• 2 cups fresh Watermelon (cubed)
• 5-6 fresh Mint leaves
• 1 tbsp Lime juice
• 1 tsp Agave or Maple syrup
• 1 tsp Karen’s Liquid Gold (melted)
• Sparkling water to top

The Method:

1. The Blend: Pulse the watermelon, mint, lime juice, and agave in a blender until smooth.
2. The Infusion: Add your Liquid Gold and pulse one more time. The mechanical action of the blender helps the oil disperse into the juice.
3. The Pour: Strain the mixture through a fine mesh into a tall glass filled with ice.
4. The Fizz: Top with sparkling water and give it a gentle stir.

Karen’s Tip: “For a fancy touch, rim your glass with a little lime juice and chili-salt (Tajín). It makes the watermelon flavor pop!”
