Garden Vegan Guacamole Vegan Style – The Ultimate Healthy Fat Carrier

The Ingredients for Vegan Guac:

• 3 ripe Hass avocados
• ½ Red onion, finely diced
• 1 Jalapeño, seeded and minced
• 1 clove Garlic, minced
• Handful of fresh Cilantro, chopped
• Juice of 2 fresh Limes
• 1 tbsp Karen’s Liquid Gold (melted)
• Salt and Cumin to taste

The Method:

1. The Mash: In a medium bowl, mash your avocados. I like mine a bit chunky—it feels more ‘real’ that way!
2. The Infusion: Pour the melted Liquid Gold and the lime juice over the avocado. The lime prevents browning while the oil blends into the creamy fruit.
3. The Fold: Gently fold in your onion, garlic, jalapeño, and cilantro.
4. The Seasoning: Add your salt and cumin. Taste it with a chip—it’s the only way to be sure!

Karen’s Tip: “If you have leftovers, press the avocado pit into the center of the bowl and cover with plastic wrap pressed directly against the surface to keep it vibrant green.”
